– Pretzels and German Lye Rolls: In baking, particularly in the preparation of traditional pretzels and German lye rolls, sodium hydroxide is used to create the distinctive glossy, brown crust.

– Hominy and Nixtamalization: In the production of hominy and in the nixtamalization process, which is used for making masa, sodium hydroxide is used to remove the hull and germ of the corn.
